Come on out to the farm to learn how rich soils and perennial grasses combine to create our wonderful meat. Enjoy a relaxing tour around the farm and then sit down with fellow farm supporters for a delicious dinner.
2:30 pm: Meet the trolley at Greenhouse Bed and Breakfast and join farmer Harry Carr for a tour of Mint Creek Farm. There will be plenty of time to visit all the animals living on the farm including cows, chickens, ducks, pigs, sheep and goats.
Dinner: The trolley will circle back to the B&B for dinner. Mark Payne, the executive chef of The Ritz-Carlton Chicago’s deca restaurant will be the guest chef for the evening. Mark is a London native who has worked in the Ritz-Carlton/Four Seasons group since 1997. His tenure includes the Four Seasons in Las Vegas, New York and the West Indies. He is committed to cooking with ingredients from local producers resulting in fresh, intensely flavored dishes that change with the seasons.
Heirloom Tomato Gazpacho, with strawberries, basil, blue prawns, crisp guanciale and olive oil
Frisee Salad with summer herbs, lardons, slow cooked farm egg, lamb bacon
Mini pork pies, lamb summer sausage, goat rillette accompanied with piccalilli and macerated peaches
Barbecued goat ribs, Burtons Maple Syrup secret sauce, dehydrated onions, corn pudding and summer slaw
Selection of Summer market fruit tarts
Bring your favorite bottle of wine to complement your dinner. Iced water with lemon and herbs will be included.
