In this class hosted at Eataly Chicago, chef Paul Fehribach of the Andersonville restaurant Big Jones will demonstrate two dishes using ingredients listed on The Ark of Taste catalog of distinctive foods facing extinction paired with Italian wines selected by our beverage experts. Throughout the class, you will learn about Southern-style cooking with an emphasis on sustainability and heirloom foods all while having the opportunity to meet members of the Slow Food Chicago Chapter who will be joining us to discuss the pillars of the Slow Food movement and the Ark of Taste.
